1 cup confectioner's sugar 1 cup finely chopped pecans 1/4 cup light corn syrup 2 tbsp. cocoa 1/2 cup Malibu brand rum 1/2 cup sugar In a large bowl, thoroughly mix all ingredients except the white sugar. Shaoe into one-inch balls and roll in the sugar. You can also roll the balls in flaked coconut- they're prettier that way, I think. Store in tightly covered container for at least 3 days before serving to allow the flavors to blend and mellow. Keeps up to 2 weeks. Do not freeze them. |
