one of our favorites from Family Circle Classic Essential Casseroles What we love about this recipe is that it takes 10 - 15 minutes to prepare, then it fills your home with that cooking casserole smell for two whole hours. Great to prepare if the little ones have a sleep in the afternoon.
Serves 4 - 6
Ingredients
1kg Topside or round steak
1/4 cup plain flour
3 rashers bacon, rind removed
1 tablespoon oil
12 pickling onions
bouquet garni
1 cup red wine
2 cups beef stock
200g button mushrooms
1 clove garlic
Cooking method
Step 1:
Trim the steak of fat and sinew, cube and lightly coat in seasoned flour.
Step 2:
Cut bacon into squares. Heat oil in large flame proof casserole dish and quickly cook bacon over medium heat. Remove
Step 3:
Brown the meant well, in batches if required, remove and set aside. Add onions, cook until browned.
Step 4:
Return meat and bacon to casserole dish with bouquet garni, wine, stock,. mushrooms and garlic. Bring to the boil, then reduce heat and simmer for 90 minutes or until meat is very tender, stir occasionally.
Remove Bouquet garni before serving.
