Fast Gourmet Salsa1 cup frozen corn, thawed
1 cup diced tomato
1 can black beans, drained and rinsed
1 diced purple onion
1 diced sweet red pepper
1 grated carrot
1 jalapeno pepper, seeded and minced
1 clove garlic, minced
1 tsp ground cumin
½ tsp ground chili powder
¼ tsp black pepper
¼ cup chopped fresh cilantro (more or less to your taste)
Spray a medium saucepan with non stick spray. Add all ingredients except cilantro.
Cook and stir over medium heat for 5 to 7 minutes, until onions are tender and vegetables are heated through.
Stir in cilantro. Serve warm or cold.
Makes about 4 cups
