1 1/4 cups whole wheat flour
1 cup oat bran
1 1/4 teaspoons cinnamon
1 tablespoon baking powder
1/2 cup evaporated skim milk
1/2 cup apple juice, frozen concentrate -- thawed
2 egg whites
1 banana -- mashed
(or 1/2 cup applesauce)
1 cup peaches -- diced
( or berries, diced pears, apples raisins
etc.....)
1/2 cup chopped nuts -- optional
Preheat oven 425, spray muffin tins with nonstick cooking spray or fill with
liners. Combine all dry ingredients, and then mix the wet ingredients
together except 1 cup fruit. Combine both dry and wet ingredients and then
add fruit and nuts stir until just moistened. Fill muffin tins and bake for
17 minutes or until toothpick inserted near center comes out clean.
Per muffin = 142 calories, 4 gm fat, 0 mg cholesterol, 116 mg sodium, 25 gm
carbohydrate, 4 gm fiber, 5 gm protein
