BEEF & POTATO CURRY 1 pound lean ground beef
1 chopped onion
2 large cloves garlic – minced
2 tsp. Tomato paste
1 Tbsp. Mild curry paste or powder
1 Tbsp. Minced gingerroot
¼ tsp. salt
4 potatoes peeled & diced
2 c. beef stock
1 ½ c. frozen peas
¼ c. chopped fresh coriander or parsley (opt.)
1) In large Dutch oven brown beef. Drain and return to pan. Add onion, garlic, tomato paste, curry paste, ginger and salt. Cook stirring for 5 min. or until onion is soft.
2) Add potatoes & stock; bring to boil. Reduce heat, cover & simmer for 15 min. Stir in peas, cook covered for 5 min. or until peas and potatoes are tender. Stir in coriander or parsley.
