1 lb. uncooked chicken (best with white meat) cut in chunks or strips olive oil 1/4 c. lemon juice flour salt & Pepper Optional: Mushrooms, artichoke hearts, capers. Mix flour, salt and pepper together for the breading. Heat olive oil in a skillet. Coat the chicken with the flour mixture and fry in the olive oil until golden brown crust forms. Remove the chicken and put on paper towel. Add lemon juice (and any or all of the optional items to the oil, still cooking. Scrape any breading off the bottom of the pan and mix with the new mixture. The flour from the breading should thicken the sauce a bit. Reintroduce the chicken into the sauce and coat. Serve with garlic mashed potatoes, oven baked redskins or a wild rice. |
