1 1/4 cups water 1/4 cup shortening 1/3 cup applesauce or mashed banana 1 cup SUN-MAID Raisins 2 teaspoon cinnamon 1/2 teaspoon nutmeg 4 egg whites 2 cup flour 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 2 tablespoons hot water In a large saucepan, cook over medium heat combine water, shortening, applesauce or bananas, raisins, cinnamon, and nutmeg. Bring to a boil; about 5 minutes, or until thickened, then cool. Beat in eggs, one at a time, beating well after each addition. Set aside. In a large bowl, sift together flour and baking powder. Set aside. In a small dessert dish, dissolve baking soda and salt in 2 tablespoons hot water. Stir in baking soda alternately with the flour mixture into raisin mixture until completely blended. Drop dough by rounded teaspoon onto a lightly greased cookie sheet. Bake in 375 degree oven for 8 to 10 minutes, or until slightly browned. Transfer cookies to a wire rack and let cool. Makes 48 cookies.
