Peanut Butter Jumbo Cookies
Drop cookies
Yield: 2-3 dozen
Total Time: 30 minutes2 1/2 cups all-purpose flour
1 tsp. baking powder
1 1/3 tsp. baking soda
2 cups packed light brown sugar
1 cup vegetable shortening
1 cup peanut butter
2 large eggs
-Preheat the oven to 350F degrees. Lightly grease 2 bakings sheets.
-Combine the flour, baking powder, and baking soda.
-In a large bowl, beat together the brown sugar, vegetable shortening, peanut butter,
and eggs.
-Gradually blend in dry ingredients. (The dough will be very soft.)
-Using a serving spoon, drop the dough by spoonfuls 3 inches apart onto the prepared
baking sheets.
-Using the back of a spoon dipped in flour, spread the cookies into large rounds.
-Bake for 10-12 minutes, until golden brown.
-Cool on the baking sheets on wire racks.
Baking notes: Chunky peanut butter can be used for more crunch.
