OATMEAL-CARROT COOKIES3/4 cup butter or margarine, softened
1 3/4 cup flour
3/4 cup brown sugar, packed
1/2 cup granulated sugar
1 egg
1 teas. baking powder
1/2 teas. cinnamon
1/4 teas. baking soda
1/4 teas. ground cloves
1 teas. vanilla
2 cups oatmeal
1 cup carrots, finely shredded
1/2 cup raisins
In large bowl, beat butter or margarine with electric mixer on medium to
high speed for 30 seconds or until soft. Add about half of the flour, the
brown sugar, granulated sugar, egg, baking powder, cinnamon, baking soda,
cloves and vanilla. Beat until combined, scraping sides of bowl.
Beat or stir in remaining flour. Stir in oats, carrots and raisins. Drop
dough by rounded teaspoons 2 inches apart onto ungreased cookie sheets.
Bake until edges are golden brown. Remove from baking sheet, cool on wire
rack.
