1 tsp. baking soda 1 tsp. salt 1 1/2 cups oil 2 cups sugar 3 eggs 2 tsp. vanilla 2 cups chopped or finely processed apples 1 cup raisins or pecans (optional) Icing ingredients: Thoroughly mix first three dry ingredients and set aside. Beat eggs, oil and vanilla together and then add sugar. Mix thoroughly. Fold in flour mixture and then apples and optional raisins or pecans. Pour into a bundt cake pan or 13X9 pan. Bake in a preheated oven at 325 degrees for 1 hour or shorter, depending on the type pan used. It's done when a toothpick inserted comes out clean. Let cool for 15 minutes before pouring on the icing. To make the icing mix the sugar, butter and milk in a sauce pan and stir until boiling. Continue stirring as it boils for 2 minutes. Pour over cake. Note: Most any apple will do but sweet rather than tart do best, I think. |
