3 1/2 C. flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 1/2 tsp. cinnamon 1 tsp. ground ginger 1 tsp. ground nutmeg 1/2 tsp. cloves 2 C packed brown sugar 1 C. vegetable oil 1/2 C. molasses 2 tsp. vanilla extract 4 eggs 3-4 pears, peeled, cored and diced 1 C. chopped walnuts (optional) | | Preheat oven to 350 degrees. Grease and flour two loaf pans. In a bowl, combine the first eight ingredients. In a separate large mixing bowl, combine brown sugar, vegetable oil, molasses, vanilla, and stir in flour mixture. Pour into prepared loaf pans. Bake for 55-65 minutes or until done. Cool in pans for 15 minutes. Remove from pan and cool completely. |
