Lemon Coconut Loaf

1/2 cup butter, softened
1 cup sugar
2 eggs
4 1/2 tsp lemon juice
1 1/2 cups flour
1 tsp baking powder
1/4 tsp salt
1/2 cup milk
1/4 cup flaked coconut
1 tsp grated lemon peel
Glaze:
1/4 cup confectioners sugar
2 tbsp lemon juice
Preheat the oven to 350 F. Grease a 8 x 4 in loaf pan. In a large bowl, cream the butter and the sugar until light and fluffy. Add the eggs, one at a time. Beat well after each addition. Beat in the lemon juice.. Combine the flour, baking powder, and salt. Add to the creamed mixture alternately with the milk.

Stir in the coconut and the lemon peel. Pour into the prepared loaf pan and bake for 60-70 minutes or until a toothpick inserted into the center comes out clean. Cool for 10 minutes. Remove from the loaf pan and cool on a wire rack. Combine the glaze ingredients and brush over the loaf.

Makes 1 loaf - about 16 slices
