Eggplant & Sausage in Tomato Sauce

1/2 small eggplant
1 pound of sausage cut up
4 cloves of garlic
1 jar of spaghetti sauce
1/2 pound of spaghetti
Grated cheese for topping

Cook sausage with some water to get rid of fat. Brown in olive oil.

Saute cut-up eggplant in olive oil; cover to steam & brown. Add garlic to brown. Add spaghetti sauce and simmer. Cook for at least 30 minutes, stirring occasionally. Boil spaghetti till tender.
Cover spaghetti with eggplant and sausage sauce. Sprinkle with cheese before serving.
