| Heat oil in large skillet on med-high heat. Add onion, green bell pepper & celery. Cook and stir til veggies are crisp-tender (about 2 mins.) Add chicken; cook 5 mins. per side or til browned. Mix mushroom gravy mix and evaporated milk in small bowl. Stir into chicken mixture. Bring to a boil. Reduce heat to low; cover and simmer approx. 12 mins. or til chicken is cooked through. This is awesome served over either wide egg noodles or rice!
