1/4 cup olive oil 2 tbs white wine vinegar 1 tsp Dijon mustard 1/4 cup dried cranberries 10 oz bag spinach leaves 1 Gala or Granny Smith apple, cored and thinly sliced 1/4 pound wedge Brie cheese, sliced 1/4 cup smoked whole almonds | | | In microwave bowl, whisk together oil, vinegar and mustard. Stir in cranberries. Microwave 15 seconds or until cranberries plump. With slotted spoon, remove cranberries. Place spinach on serving platter. Arrange apples and Brie slices in fan shaped pattern. Top with cranberries and almonds. Drizzle with warm dressing. Serves 6. |
