Bleu Cheese Chicken

4 boneless, skinless chicken breast portions
3 TBL bleu cheese crumbles
2 TBL butter
1 TBL grated parmesan cheese
hot sauce (a couple of dashes)

Butterfly chicken breast portions.

To make filling: Mix together bleu cheese, butter, parmesan and add a couple of dashes hot sauce (more or less depending on how spicy you like things).

Divide the filling and place in the centers of the chicken breasts. Using a toothpick or piece of uncooked spaghetti, close. Place in baking dish and bake 350 degrees for 35 minutes or until done.

Serves 4.
