Combine flour, sugar, baking powder, cinnamon and salt. In a separate bowl combine the milk and coffee granules, blend until dissolved. Add butter, egg and vanilla extract and mix well. Combine both of the mixtures. Blend together just until moistened. Fold in the chocolate chips. Spoon into greased or paper lined 12 cup muffin pan and fill each one 2/3 full. Bake in preheated 375ยบ oven 15-20 minutes. Cool in pan on wire rack 5-10 minutes.Serve with Espresso Spread below Espresso Spread 1 (4 oz) package of cream cheese, cubed 1 T sugar 1/2 tsp instant coffee granules 1/2 tsp vanilla extract 1/4 cup mini semi-sweet chocolate chips In your blender combine cream cheese, sugar, coffee granules, vanilla extract and the chocolate chips. Blend well. Cover and refrigerate until ready to spread on muffins.
