| Heat broiler. Pierce potatoes with a fork. Place on paper towels in the microwave. Microwave on high for 16 min. Heat oil in a skillet. Add asparagus and cook 5 min. Season with 1/8 tsp each salt and pepper, remove from heat. Line a baking sheet with foil, place potatoes on foil. Cut open potatoes, season with remaining salt and pepper. Dot with margarine, top with asparagus. Divide cheese among potatoes. Broil 3 min. or until cheese is lightly browned on top. Makes 4 servings. |
