2 packages enchilada sauce (this is a powder and should be with the taco seasoning)
12 ounces tomato paste
3 1/3 cups HOT water
2 pounds ground beef
1/2 cup onion
1 tsp garlic powder
2 (1 pound) cans tomatoes
Shredded Lettuce - to taste
Colby cheese - shred the whole block!
6-8 (depending on the size) Super-sized tortillas (the biggest you can find)
Mix together the enchilada sauce, tomato paste, & hot water; set aside.

In a large skillet, brown beef, onion, and garlic; drain. Add tomatoes, & 1 cup enchilada sauce.

Warm tortillas for 5-10 minutes at 350°.

Place warm tortillas in pie pans (can put in a 9x13" pan, but if you do it in the tin pie pans, you can just toss the pan instead of having to wash!), fill with meat mixture, desired amount of lettuce, & cheese. Wrap burrito style and tuck ends under.

Cover with remaining sauce and cheese

Heat 15 - 20 minutes at 350°
