| Mix together the enchilada sauce, tomato paste, & hot water; set aside. In a large skillet, brown beef, onion, and garlic; drain. Add tomatoes, & 1 cup enchilada sauce. Warm tortillas for 5-10 minutes at 350°. Place warm tortillas in pie pans (can put in a 9x13" pan, but if you do it in the tin pie pans, you can just toss the pan instead of having to wash!), fill with meat mixture, desired amount of lettuce, & cheese.
