1 1/2 lbs of spaghetti, cooked --great use for leftover spaghetti 1 green pepper, sliced into very thin strips 1 small onion, sliced into very thin strips 8 oz button mushrooms, sliced thin 1/2 lb chicken breast, cooked and cubed into small chunks 8-12 oz frozen shrimp Olive oil Cajun seasoning 1/3 c. chicken broth | | | In a large skillet, cook the veggies in the 1/3 c. chicken broth until fork tender. Add shrimp and cook until tender. Move to a bowl and keep warm. In the same skillet, add some olive oil and chicken cubes, warm but do not fry chicken. Add spaghetti and drizzle with more olive oil. Cook to heat through. Add cajun seasoning per taste--we tend to like a lot of seasoning so try to find one with low salt content.
