14 oz can beef broth 1 cup chopped onion 2 small sweet potatoes, peeled, halved lengthwise and cut crosswise in 1/2 inch thick slices 2 medium parsnips, peeled and diced 8 oz baby carrots 4 meaty beef short ribs 1/4 tsp pepper 3 sprigs dill 14 1/2 oz can diced tomatoes in juice, not drained | | | Mix all ingredients except ribs, pepper and dill and tomatoes in a slow cooker. Top with ribs, sprinkle with pepper, then add dill and tomatoes. Cover and cook on low 7-9 hours or until ribs are very tender. Spoon fat off surface. Serve in shallow soup plates, garnish with snipped dill. Makes 4 servings. |
