Apple Muffins

1 2/3 c All-purpose flour
2 1/2 ts Baking powder
1/2 ts Salt Sugar substitute to equal 1 tb sugar
1 ts Ground cinnamon
1/4 ts Ground nutmeg
2/3 c Skim milk
1/4 c Reduced-calorie margarine Melted
1 Egg,lightly beaten
1 c Minced apple
Vegetable cooking spray
Combine first 6 ingredients in a medium bowl.Combine milk,margarine,and egg; add egg mixture to dry ingredients,stirring just until dry ingredients are moistened.Fold in apple.Spoon batter into nonstick muffin pans coated with cooking spray,filling two-thirds full.Bake at 400 degrees for 25 minutes or until lightly browned.

Yield: 1 dozen.
