Click here for a printable version of this recipe

1 c. sugar
1/2 c. margarine, softened (Personally I would use butter, I am not
not sure if it would make a difference)
3 eggs
2 1/2 c. flour
2 tsp. baking powder
1 tsp. salt
2/3 c.. milk
2 tbsp. fresh lime juice
1 tbsp. grated fresh lime peel
3/4 c. chopped pecans
Lime glaze (see below)
Beat together sugar and margarine in large bowl of electric mixer.
Add the eggs, one at a time, beating after each addition. Combine
the flour, baking powder, and salt; add to creamed mixture
alternately with milk. Beat in lime juice and peel; stir in pecans.
Pour into greased 9 1/4 x 5 1/4 x 2 3/4-inch pan. Bake at 350
degrees for 50 to 60 minutes or until a wooden toothpick inserted
near the center comes out clean. Cool in pan for 10 minutes; remove
from pan and finish cooling on a wire rack. Drizzle with lime
glaze. Slice thinly to serve.
