8 cups Water 2 tablespoons soup mix - Barley and Lentils. 1 large potato 1 large onion 4 sticks celery 1 tomato 1 piece of pumpkin 1 carrot 1 parsnip Salt, Pepper, 1 tablespoon tomato sauce 1 tablespoon worcestershire sauce Cover shank with water and add soup mix - bring to the boil - simmer for about 1/2 hour. Leave to cool, remove any fat, then add grated vegetables. (I chop celery, tomato and onion.) Add balance of ingredients and bring to boil. Simmer gently for about 1 hour. This will freeze well. |
