Colleen’s Chicken and Rice Skillet

3 or 4 boneless chicken breasts
house seasoning (salt, pepper, garlic powder, paprika)
A little oil for the pan
1 onion, chopped
1 red pepper, chopped
1 cup rice
2 cans chicken broth
1 cup Parmesan cheese
1 cup peas-optional
Slice and season the chicken; brown.

Add onion.

Add rice and 2 cans of broth. Bring to a simmer, cover and cook for 20 -25 mins.

Add peppers and cheese (and peas if desired) and let sit 5 min.

We like our pepper crisp so I put them in at the end. They can be put in at anytime.
