Maple Glazed Chicken

3 & 1/2 Lb chicken cut into pieces
3/4 tsp salt
1/2 tsp pepper
1/2 C maple syrup (for best flavor, use pure maple syrup, not imitation or pancake syrup)
2 Tbs butter
1/2 tsp ground ginger
1/4 tsp ground cinnamon
Preheat oven to 375 degrees. Coat roasting pan with cooking spray. Sprinkle chicken with 1/2 tsp salt and 1/4 tsp pepper, place in single layer in roasting pan. Roast until no longer pink near bone, about 1 hour and 5 min.

In pan over med. heat, combine syrup, butter, ginger, cinnamon and remaining salt and pepper. Bring to boil. Over low heat, cook without stirring, until reduced to 1/3 cup. 8-10 min. Bush over chicken 2-3 times during last 15 min. of cooking time.

You can substiture 1/4 C honey for the maple syrup and heat with the butter and spices just until butter melts, for a honey glaze.
