Bread dough for one loaf, pre-purchased or homemade Chopped onions, about 1 cup Chopped broccoli, about 1 cup Butter, about 2 Tbsp Chopped or sliced ham pieces, about 1 1/2 cups Grated cheeses, the more flavors the better, about 1 cup Tomato or spaghetti sauce, about 3/4 cup Fresh herbs (or dried) parsley, thyme, basil, 2 Tbsp each Lightly stirred fresh egg Garlic salt to sprinkle on top | |
1. Saute the onion and broccoli in the butter until soft. 2. With a rolling pin or your fingers, make an 11 x 15 inch rectangle with the bread dough. 3. Down the middle only of the rectangle, lengthwise, layer the ingredients in the following order: Tomato sauce, Herbs, Ham, Onions and broccoli, Cheeses. 4. Cut slits on the diagonal in the edges of the dough. My slits are about 3 to 4 inches long on each side. You will want to make about 6 to 8 such slits and on the other side make the same matching up the sides. 5. Fold the short ends in a little bit over the end of the roll ingredients and then starting at one end, pull and stretch each side of the bread dough slits like a strap up and over the middle ingredients, give them a half twist past/around each other and lay the ends back down the opposite sides. If the straps are long enough you can tuck them under the roll. Work your way up the roll until you have the 6 to 8 slit/straps twisted and tucked under. It will look like a fancy braided pattern on the top but it is just a twist of the straps. Some of the ingredients will show but that is okay. 6. Set the sandwich roll loaf aside to rise for a half hour. Brush with egg and sprinkle with garlic salt. 7. Bake 350F for 35 to 45 minutes or until the top is browned and the dough sounds hollow when tapped. 8. Cool for a few minutes until the cheese sets a little bit. Cut into 2 inch slices and serve with extra sauce for dipping.Any combination of ingredients can be put into these sandwiches. You will want a sauce, a vegetable, a meat maybe, and a cheese. Adding a sprinkle of sesame or poppy can be another alternation. Here is a reuben: Bread rye dough, mustard, sauerkraut, corned beef, swiss. Here is a pizza version: Bread dough, tomato sauce, pepperoni or sausage, green peppers, mozzarella. The list is endless. Maybe a meatball version, or a meshugenna version with pastrami and coleslaw.
