Ham & Swiss Bread Pudding

Cooking spray
1 1/4 cups chopped green onion (I used 1 bunch)
3/4 c chopped ham (I just used a few slices we had leftover in the freezer)
2 garlic cloves, chopped
7 (1-oz each) Hawaiian bread rolls, cut into 1/2 inch cubes (I used a half-loaf that was going stale)
1 3/4 c skim milk
3/4 c egg substitute
2 tbs. Dijon mustard
1/4 tsp. salt
1/4 tsp pepper
1/8 tsp nutmeg
3/4 c shredded Swiss cheese, divided
Heat a small nonstick skillet coated with cooking spray over medium-high heat. Add onions, ham, and garlic. Saute' 5 minutes. Remove from heat; cool.

Arrange bread cubes on baking sheet. Bake @ 350* for 15 minutes or until lightly browned, turning occasionally.

Combine milk and next 5 ingredients in a large bowl, stirring with a whisk until well blended. Stir in ham mixture. Add bread, tossing gently to coat.

Arrange half of the bread mixture in an 8-inch square baking dish coated with cooking spray. Sprinkle with half of cheese. Top with remaining bread mixture. Bake @ 350* for 25 minutes. Sprinkle with remaining cheese; bake an additional 20 minutes or until set.
