Chicken Drumsticks with Lemon and Soy

8 chicken drumsticks - skinned
2 tablespoons sugar
2 tablespoons lemon juice
1-1/2 teaspoons minced ginger
1 tablespoon soy sauce

Sauce
1/4 cup Soy sauce
1-1/4 cups water
1 tablesp. crushed ginger
1 teaspoon oil
2 cloves crushed garlic
1 tablespoon sugar
1 tablespoon red wine vinegar
2 tablespoons dry sherry
3 tablespoons cornflour -or cornstarch

Slice the drumsticks across 3 times through the thickest part to allow the flavour in.

Mix other ingredients together and toss the drumsticks in. Cook on BBQ or grill, turning occasionally. OR cover a tray with foil and cook under the grill. Cook until juices run clear when pierced with a knife. Serve hot or cold with noodles, rice or salad.

Place all ingredients in a jar and shake well. (Will keep in frig. for at least a week and is great on steamed vegetables.) Pour over chicken legs. This is really a yummy recipe.
