4-6 boneless chicken breasts Instructions: Preheat oven to 350f. Rinse chicken breast. Pound each chicken breast with mallet to 1/4" thick. Crumble sausage in a skillet and cook until completely done - about 10 minutes. Let cool. Chop jalapenos and mushrooms if using them. *Use gloves when chopping Jalapenos, they can burn your hands!* Once the sausage is cool, mix the cream cheese, salt and pepper, chopped mushrooms, jalapenos, and cheddar cheese to form a thick mixture. Divide the mixture among the chicken breasts, by placing a scoop of the mixture into the center of each chicken breast. Roll each chicken breast up into a roll and secure with toothpicks. Bake, uncovered, for about 25 minutes at 350 degrees. |
