1 tablespoons mango chutney 2 teaspoons dijon mustard 2 tablespoons port 2 tablespoons lemon juice 2 teaspoons oil 500 grams pork fillet - sliced. 1 medium onion. Combine mango, chutney, mustard, port and lemon juice. Blend briefly sp that mixture retains some texture. Heat oil and stir fry pork fillet for 3 minutes, add onion and continue to stir fry for further 2-3 minutes. Pour mango sauce over prok fillet and heat until just boiling. Serve immediately with noodles, steamed rice, vegetables or salad. This is delicious! |
