8 to 10 flour tortillas (8 1/2" fajita style) 8 oz (or so) cojack cheese, shredded (this is a marbled combination of colby and monterey jack cheese) 1/4 white or yellow onion, minced 1 can (10 oz.) red enchilada sauce, hot or mild 1/2 cup shredded cheddar cheese 2 green onions, thinly sliced
| | | Sprinkle about 2 to 3 Tbsp. shredded cojack cheese down the center a flour tortilla, sprinkle with about 1/2 tsp. minced onion. Roll up and place seam side down in a 9x13 glass baking dish. Repeat with remaining tortillas, cojack cheese and onion. Pour enchilada sauce over all. Sprinkle with cheddar cheese down the center. Top with green onion.
