Carolynn's Homemade Chili

CAROLYNN’S HOMEMADE CHILI
Makes 12 servings


3 cups dried small red beans OR PINTO beans
6 cups water
3 bay leaves
1 pound ground beef
1 pound pork sausage
1 LARGE onion chopped
3 cloves garlic minced
1 29-ounce can tomatoes (plus 1 can of water if thinner chili is desired )
1 tablespoon chili powder
1/2-1 tsp. red chili peppers dried, crushed (add to taste, start with smaller amount, then add more to desired degree of HOT!!!
3/4 teaspoon curry powder
1 tablespoon cumin powder
1 tablespoon salt
1/4 teaspoon hot pepper sauce (Tabasco)also "to taste" or optional if a milder chili is desired for the children; more can be added to individal servings at the table.

Wash and pick over beans (pinto beans may be substituted for red beans). Put into large kettle with water and bay leaves. Bring to boil; simmer, covered, 1 to 2 hours or until tender. In skillet brown meat, onions, and garlic. Add to drained beans along with remaining ingredients.Add 1 tomato can of water if a thinner, soupier Chili is desired. Simmer for 1 hour. Serve hot.
