| Mix sweet potatoes, sugar margarine and juice. Form into a ball by putting a marshmallow in the center of 1 heaping tbs. of sweet potato mixture. Be sure to cover the entire marshmallow with sweet potato mixture. Roll in coconut. Bake in 325 degree F oven for 5 - 10 minutes or just enough to melt marshmallow. Sweet potato balls may be frozen in which case they should be thawed before baking. Yields: 10 - 12 servings
