Red Onion Potato Salad

6 medium potatoes, peeled, cooked and sliced
1 cup sliced celery
1 cup thinly sliced red onion
1/3 cup chopped parsley
1/4 cup Italian dressing (low fat, fat free or regular)
3 tablespoons wine vinegar
2 tsp. salt
dash cayenne pepper

In large bowl, combine hot potatoes with remaining ingredients. Refrigerate to chill. Makes 6 servings.
