6 potatoes, boiled with skins. Cool and cube 1 small onion, chopped 1 cup celery, chopped 1/2 cup green pepper, chopped 3 hard boiled eggs, sliced 1 cucumber, seeded and chopped 1 1/2 tsp. salt 1/4 tsp. paprika 1/4 cup French dressing 1/2 cup mayonnaise | | | Combine all ingredients except dressings and a few slices of egg for garnish. Marinate in French dressing and chill in refrigerator for 4-6 hours. Just before serving, add mayonnaise and mix carefully. Garnish with parsley and reserved egg slices. Serves 8.
