Minted Rice

1/2-cup long grain white rice
1/2 medium cucumber, diced (1 cup)
1/4 cup chopped fresh mint
1/2-cup nonfat plain yogurt
Salt and freshly ground black pepper

Bring a large pot with 3 to 4 quarts water to a boil. Add the rice and boil 10 minutes. Meanwhile, mix cucumber, mint and yogurt together in a serving bowl. Drain rice and add to bowl. Add salt and pepper to taste. Toss well.
