| Heat broiler or grill. Stir together lemon juice and oil. Brush on both sides of eggplant. Broil 6-8 inches away from heat, or grill, turning once, until tender and lightly browned. (6-8 minutes) Meanwhile, combine all sauce ingredients; mix well. Serve over warm eggplant slices. Makes 5 Servings. Note: You can also slice the eggplant in half and serve inside a pita with sauce.
