Southwest Baked Beans

1 pound ground chuck
1/2 cup Honey
1/4 cup ketchup
1 tbsp cider vinegar
1 tsp chili powder
1 tsp salt
32 oz canned black beans or kidney beans, rinsed
12 oz canned kernel corn, drained
4 oz canned chopped green chilies, drained or
1 large jalapeno pepper, seeded and chopped
1/2 cup chopped onion
2 tbsp chopped cilantro
garnish - red bell pepper rings and cilantro sprigs
Preheat oven to 350 degrees. Brown and drain ground beef. In a 1-1/2 qt casserole, combine honey, ketchup, vinegar, chili powder, salt, beans, corn, green chilies, onion, and cilantro. Add the browned ground chuck. Cover and bake 45 minutes, stirring occasionally. Arrange bell pepper rings over top, re- cover and continue baking 15 minutes. Garnish with cilantro sprigs.

Makes 6 servings.
