Chicken with Creamy Wine Sauce

2 whole chicken breasts, cured
2 cups mushrooms, sliced
Dry white wine
Half and half
Sour cream
Freshly grated Parmesan cheese
Salt and pepper to taste
Olive oil for sautéing
Sauté the chicken breasts and mushrooms in about 1 tbsp. of olive oil. Season with Parmesan cheese. Add wine to cover and simmer until chicken and mushrooms are completely cooked. Add some additional Parmesan cheese,then more wine to maintain sauce. Stir in some sour cream and half and half and continue to simmer. Add salt and pepper to taste.

Serve this chicken along with sauce over your favorite pasta.

Note: This recipe does not call for specific amounts this is a recipe that you have to experiment with and make it your own. Believe me--you will love this chicken.
