3 whole chicken breasts, skinless, boneless 6 slices of cooked deli ham, sliced thin 6 slices of Swiss cheese, sliced thin 2 pkg. Knorr Hollandaise sauce mix Fresh parsley, minced, For garnish toothpicks | | | Rinse chicken and pat dry. Pound chicken with flat mallet or palms of your hands until 1/4 inch thick. For easier clean up, it is rest to place chicken between two sheets of plastic wrap before you begin to flatten. Lay each chicken piece flat; place one slice of ham and one slice of cheese on top of chicken. Roll up the chicken, end to end. Secure with a toothpick or two if needed. Set seam side down into a greased 9xl 3 inch baking pan. Bake, uncovered, in a 400 degree oven for about 15 minutes. To serve, prepare both packages of the hollandaise mix according to the directions on the pkg. Arrange chicken on serving platter and spoon sauce over. Sprinkle with minced parsley. |
