| In bowl or re-sealable plastic bag, combine the spices. Spray the chicken breast with nonstick cooking spray on one side and sprinkle with 1/2 of the spice mixture. In a heavy-bottomed skillet*, place the chicken spice side down. Spray the top side with cooking spray and sprinkle with remaining spices. Cook in very hot skillet for about 2 1/2 minutes per side. *It is best to use a cast-iron skillet. Note: The spice mixture in this recipe can be used for fish also. Keep in mind that when something is "blackened"; there is a tremendous amount of smoke that is created. When blackening at home, you will not get the same effect as you would from a professional kitchen but the result is still fabulous. |
