1 pound pork, cut into bite-size pieces 1 tablespoon taco seasoning 1-8 ounce chunky salsa 2 teaspoons oil 1/3 cup apricot or peach preserves
Toss and coat pork with taco seasoning. Brown in a frying pan with oil. Drain and return to pan. Add salsa and preserves; cover and simmer for 15 to 20 minutes. Serve with rice.
