1-1/2 pounds ground beef, fried with 2 cloves chopped garlic, drained 2-16 oz cans Black-eyed Peas (one with Jalapenos if you can find it) 2 Cups Rice, Cooked 1-1/2 Cup Shredded Cheddar Cheese 1/2 Cup Onion, diced 1-16 oz can Tomatoes, drained and chopped 1 Tbs. Butter, melted Salt and Pepper to taste | | | Mix all ingredients together and place in a 13 x 9 baking dish. Bake in a 350 degree oven for 30 minutes or until bubbly. Will serve four hungry adults or six with lots of salad and rolls. |
