City Chicken (Beef)

Pork steak and Beef steak threaded on bamboo sticks...wonderful hot from the oven, or cold from the fridge. Great for picnics..parties...or Sunday Dinner for family and/or company.

3 pounds pork steak - trimmed of fat and cut into 1-1/2 inch cubes.
3 pounds beef round steak - trimmed of fat and cut in 1-1/2 inch cubes.
Flour for "dusting" meat
Adolph's meat tenderizer (use no salt)
Black Pepper (1/2 tsp. or to taste)
garlic powder (1/4 tsp. or to taste)
1 Tbs. Crisco
1 Tbs. butter
bamboo sticks or "candy apple" sticks

Heat oven to 325 ยบ F

-Thread meat on bamboo, alternating beef and pork cubes.
-Place approximately 7 or 8 cubes on each stick.
-Lightly "salt" with Adolph's tenderizer
-Dust each with flour.
-Heat Crisco and butter in heavy skillet.
-Brown meat sticks to a golden color.
-Add garlic powder (to taste) and black pepper.
-Place browned meat sticks in greased roaster.
-Add 1/4 cup water to roasting pan.
-Cover and roast approximately 1 hour.
-Drippings can be used for gravy, but gravy is unnecessary for this feast.
Roast at 325 degrees 1 hour.
