Mexican Queso Soup

Here is a super easy cheesy beef soup to prepare that is full of great flavors! I am going to give you the crockpot version of this tasty cold weather meal.

Ingredients:

* 1/2 pound beef stew meat.
* 2 cans Mexican flavored tomatoes with chilies
* 1 can beef broth
* 1 can corn - drained
* velveeta or similar processed cheese product
* salt and pepper to taste

Directions:

1. Place all ingredients, except cheese into crockpot
2. Cook until meat is tender.
3. Slice a thick piece of cheese and place at the bottom of everyone's bowl.
4. Spoon soup over to fill bowl.
5. Stir and Eat!

Serving Suggestions:

1. Crumble some tortilla chips on top.
2. Dip soft tortillas into soup.
3. Garnish with chopped green onions.

Tip From Chef Bek: You can use chicken instead of beef. If you do so, be sure to swap the beef broth out for chicken broth. As well as the beef stew meat for chicken.
