Crunchy Macaroons

l l/2 cups crisp rice cereal
l l/4 cups flaked coconut
2 egg whites
3 tablespoons sugar
l/8 tsp almond extract or l tsp vanilla (your choice)

In bowl, combine all ingredients. With moist fingers, shape into l l/2 inch mounds on parchment paper. Bake 300 degrees 20 to 25 minutes or until lightly browned around the edges. (2 cookies equals 76 calories)
