Crustless Mushroom Spinach Tart

1 8 oz can mushroom pieces
l/2 cup chopped onion
l pkg frozen spinach, thaw, chop, squeeze dry
l cup milk
l cup egg substitute or 4 eggs
salt and pepper
l l/4 cups shredded mexican blend cheese (divided)
l/3 cup parmesan cheese grated

Coat 10 inch pie plate with pam, coat with breadcrumbs.
Mix eggs with milk, add rest of ingredients except l/4 cup cheese, pour in pie plate and bake 350 degrees 40 to 50 minutes. Add rest of cheese last 5 minutes of cooking.

Note: This is excellent if you substitute asparagas for the spinach, just cook it crisp tender first
