| In a large saucepan, add potatoes, cover with water and boil until cooked. When done, drain and discard water. Mash potatoes and set aside. Preheat oven to 450 F. In a separate mixing bowl, beat eggs; add whipping cream, salt and whisk until blended. Add mashed potatoes and mix until well blended. Add both cheese and onions and stir well to blend. Add baking powder and mix well. Prepare a 9" x 9" oven-proof baking dish by spraying inside with a no-stick vegetable spray or rub inside with butter or margarine. Pour potato mixture into dish and level. Bake in preheated 450 F oven for 35 minutes or until top has a nice light brown color. The Kartoshnik will rise while cooking but will settle when removed from oven. Remove from oven and let cool for about 5 minutes before cutting. While Kartoshnik is cooling, melt butter. Cut Kartoshnik into squares, about 3" x 3" and serve with melted butter, a dollop of sour cream or yogurt and a sprinkling of green onions or chives. Serves 8 to 9 The KARTOSHNIK looks like a cake when baked, but is eaten like a potato along with your main meal. Bacon bits may also be use as a sprinkle. This recipe can be doubled, however, use only 6 large eggs and 4 teaspoons of baking powder and bake in a 9" x 13" oven-proof casserole dish. Submitted by William "Uncle Bill" Anatooskin |
