Peppered Acorn Squash

Preheat oven to 350º F. Make small 4" ring out of crumpled alum. foil to support squash in baking pan.

1 Acorn (Danish) Squash
2 tbls. honey
1/2 tsp. fresh cracked black peppercorns
1 Tbls unsalted butter
Salt (optional) to taste
8 X 8 Baking Pan (lining this with baking parchment or brown paper makes cleanup easier)

Serves 2 Adults.

Halve the squash lengthwise; remove seeds (these are good for roasting/eating).
Mix honey and cracked-black peppercorns and put 1/2 of mixture in each squash half, be sure to coat all cut surfaces of squash.
Put squash in 8 X 8 lined pan (using foil to support squash halves. Place 1/2 tbls. unsalted butter in each half.
Bake in a 350º F oven for 40 minutes.
Allow to cool slightly and serve in shell with spoon.
